     Come experience great food and wine as Margrit Biever Mondavi takes you on a unforgettable journey, sharing some of the stories that have made Robert Mondavi Winery what it is today.

     With the enthusiastic support of her late husband, Robert Mondavi, Margrit was instrumental in developing cultural and culinary art programs for the winery. These programs, which are now benchmarks of the wine world, are a showcase for artists, photographers, musicians, and the great chefs and winemakers of the world. This extraordinary pioneer of the modern-day California wine industry joined the Robert Mondavi winery in 1967 and in now Vice President of Cultural Affairs.

     Since the start of BBQ Mondays in April, Chef Kent's smoked pork shoulder, brisket, pork loin and ribs have become the talk to the town!  Each week three different meats are featured and  prepared with one of Kent's signature blend of flavors from the Rathbun Elements line of products (Texas Peach Barbecue Sauce, Honey-Teriyaki Barbecue Sauce and Ancho Chili Barbecue Sauce), guests will choose a meat or combination platter served with choice of one side item, homemade bread and butter pickles, and cornbread sticks. Available for lunch and dinner for $11.99 per person.

 RECIPE OF THE MONTH
CEDAR SMOKED SALMON WITH
KENT RATHBUN ELEMENTS PEACH BARBEQUE SAUCE

(Kent Rathbun Elements can be bought online at central,
Abacus, Jasper's Rathbun's Blue Plate Kitchen and  KentRathbunStore)
Serves 8

16 pieces salmon fillets, cut in blocks 2 to 3 ounces each
3 ounces olive oil
1 tablespoon kosher salt
2 tablespoons KENT RATHBUN ELEMENTS FAMILY BARBEQUE RUB
1 cup KENT RATHBUN ELEMENTS TEXAS PEACH BARBEQUE  SAUCE,
4 ounces cedar chips Method

1. On a sheet pan rub salmon with olive oil and season with kosher salt and KENT RATHBUN ELEMENTS FAMILY BARBEQUE RUB.

2. Put the cedar chips in the bottom of a stove top smoker and set on the stove.

3. Lay salmon on the smoker grate or in a perforated insert and put in the top on the smoker.

4. Turn on high heat for 5 to 6 minutes and smoke/bake until salmon is medium to medium rare, remove from smoker and glaze with KENT RATHBUN ELEMENTS TEXAS PEACH BARBEQUE SAUCE and serve.

Notes:
Great served with a cilantro butter sauce
