Dirty Dozen Cooking Classes
The Dirty Dozen Cooking Classes are a nine-year-long tradition at Abacus and one of Kent Rathbun's most popular events. The monthly cooking class gives guests the opportunity for hands-on learning and personal interaction with the team of experienced chefs that brings the five-star food of Abacus to fruition every day. The cost of each class is $400.

The Dirty Dozen Cooking Class is an interactive cooking class. Students come to Abacus in Dallas at 2:00 P.M. on a Sunday afternoon and receive a personalized Abacus chef's jacket. The class is then divided into four teams. The teams are headed up by Executive Chef/Partner Kent Rathbun, Corporate Chef Aaron Staudenmaier, Abacus Sous Chef Omar Flores, and Abacus Pastry Chef Rick Griggs . Each team spends the day preparing one of four courses, which includes dessert or a impressive buffet. At the end of the day (around 5:30 P.M.), each student invites one guest for dinner, wine, and a great time. Instead of leaving with recipes, you will leave with the knowledge of "how to."

*** This schedule is for the first six months of the year and we will send out the last six months schedule around May. Payment is due at the time of booking and refunds will be not be issued for cancellations within two weeks of the class. If we can rebook your spot, you will receive a full refund. There may be times when Chef Kent cannot make the class and there will one of our other chefs in his place.

February 21, 2010 - The After Mardi Gras Party - SOLD OUT
Jambalaya, Crawfish pie, File Gumbo...Enjoy the tastes and sounds of New Orleans in this exciting Creole/Cajun cooking class. Chef Rathbun and the rest of the Abacus team take you on a journey to the Big Easy where you will experience fabulous taste sensations. This class will be buffet style.



March 14, 2010 - Game - SOLD OUT
The hearty flavor of game is a welcome addition to everyday menus when you are ready for something new to pique your palate. Some game can be tough and gamey unless you know how to cook it properly. You will learn tips and secrets for cooking tender, juicy meat every time



April 18, 2010 - Southwestern Cooking Class SOLD OUT
Master the flavors of the Southwest with a cooking class reflecting the unique cultural mix of the area. Southwestern cuisine mixes traditional New Mexican, Native American, Mexican, and Spanish. Come enjoy our chef's contemporary Southwestern cuisine.
